Brinjal Bharta is one of the bigger varieties of brinjals, deep purple in color. This Brinjal Bharta is very frequently utilized to create the tasty and famous delicacy "Baingan ka bharta". They contain a glossy skin and come in broad range of shapes, sizes and colors while the flesh is ceramic and soft in texture and includes numerous small, spongy edible seeds. Although the different varieties vary faintly in flavor and texture, it usually contains a mild pleasantly bitter flavor. Brinjals contain phytonutrients like nasunin and chlorogenic acid which have antioxidant properties and protect lipids present in the brain cell membranes and body cells from free radical damage. They also contain high amounts of anthocyanins especially the purple colored ones which protect the body from health risks, like inflammation and neurological diseases.

Baingan ka bharta is a well known Punjabi delicacy. As cut brinjals tend to get oxidised on exposure to air, keep them immersed in a bowl of water ( even water with few drops of lemon / tamarind juice can be used ) to prevent its flesh becoming brown.
